Christmas Limas with Marinated Artichoke Hearts
Christmas Limas make superlative Mediterranean-style sides and starters, and with almost embarrassing ease
There isn’t much to say about this dish - mix a jar of marinated artichoke hearts into some cooked and strained Christmas Limas, heat them a little over a low heat then toss in a generous handful of chopped flat-leaf parsley. Simple but entirely delicious.
In a similar vein - mash three or four anchovies with half a clove of crushed garlic and some olive oil into a smooth paste, then add a little red wine vinegar and chopped parsley. Mix into a bowl of cooked Christmas Limas for instant summer delight!
